Beetroot is a vegetable which has the ability to awake strong emotions in highly positive or negative way. People normally like it or hate it. As for me, you could have driven me out of the world with beetroot until the moment I tasted my grandmother’s beetroot salad. Once I visited her, she was preparing the salad. “Come on, taste it”- she said and since I love my grandma very much- and since that was about beetroot, it was really the only reason- I tasted it. It was a moment like the one Mr. Ego was going through when he tasted the first bite of ratatouille in the cartoon Ratatouille.
“This is good”- I said to her in amazement. My grandmother was smiling knowing very well that she would never give me anything bad. Quite the opposite in fact. This salad is a vitamin bomb, it strengthens the immune system in the most natural way. This is exactly what I needed now, and it fell into my lap literally, and figuratively speaking.

Autumn sunshines warms up our skin and body but they are not strong enough any more to warm up the thick stone walls of our little house. I am not really worried about cool nights until I catch a cold that makes me quite weak.
I go to my neighbor to buy some fresh milk and she not only gives me a bottle of milk but advises from the pharmacy of nature. For cold I should drink sage infusion and ribwort plantain syrup. And lots of honey. There is a small shop nearby where we can get everything. Until I am waiting for Áron how went to buy the natural medicine for me, I go down to the end of our garden and meet my other neighbor who asks me whether we like beetroot. He just took it out of the soil and they have more than enough… I grab the beetroots gratefully which are as big as half of a soccer ball. On the way to the house I find some ripe apples on the tree and a few nuts under the tree as well. I go directly to the kitchen and as long as my sage infusion is ready to drink, I peel and grate beetroot and apples, roast the nuts and I don’t forget to season the salad with honey which comes also from the region.sage infusion, the perfect medicine for cold

Beetroot salad with apples
Ingredients:
2 apples
beetroot (same amount in grams as the apples)
2 tsp of olive oil
juice of half lemon
2 tbsp honey
a handful of nuts
1 pinch of salt

Roast nuts in a pan until they get golden brown. Peel apples and beetroot, grate and season with other ingredients. Serve it with the roughly cut nuts on top.
